Dayton Street Snacks blends global flavors—from kimchi burgers to chimichurri ribeye—into one eclectic, accessible menu

Dayton Street Snacks was founded by Brian Johnson in April of 2025 with the intention of making food that is accessible to everyone, no matter their preference. While it started as a roaming food truck, it quickly found a permanent home at The Barrel House, where it now serves up a varied selection of sandwiches, burgers, macaroni and cheese and more.

“Dayton Street Snacks is a culmination of my 20-year career in food and I can’t pin down my love of one cuisine. While we definitely have a heavy focus on burgers and sandwiches, you can see influences from Asia to Europe to South America and everywhere else,” says Johnson.

These influences can be found throughout the menu, including the cheeseburger. Its diverse toppings include the traditional onion, pickles and mustard or more adventurous options like kimchi, crab cakes or chimichurri. Those looking for an affordable option without the beef can even swap the beef patty for a turkey or black bean one.

Dayton Street Snacks serves up much more than burgers. Its menu also features mac and cheese (with pickle, bacon and chorizo variations), waffle fry nachos and brussels sprouts with bacon.

“We kind of like to describe ourselves as a mix between a steakhouse and a diner. We have a 14-ounce rib eye, and we have crab cakes on the menu, but we also have these very simple direct items,” says Johnson.

Dayton Street Snacks also offers all-day brunch options, such as a meat and egg sandwich with scrambled eggs, cheddar cheese, spicy sauce, and a choice of sausage or bacon; a Korean-inspired brunch sandwich with sausage and kimchi on focaccia; and a roasted garlic Caprese omelet. Dayton Street Snacks also has some bigger meal options on its dinner menu, which offers a serving of two crab cakes or a ribeye steak served with chimichurri and cotija cheese.
