It’s all about fun and healthy eating at Boro Bistro.

When Corrie Goddard graduated with a degree in health and nutrition from the University of Toledo, she hoped to further indulge in her active, healthy lifestyle. So, she opened a restaurant when she was 23 years old.

“I like to eat healthy and enjoyed being able to bring a fun, healthy atmosphere to a small community,” says Goddard.

Boro Bistro first opened in Historic Downtown Springboro and, in 2010, moved to its current location because it needed a larger space. “We just grew,” says Goddard.

Some of Goddard’s regulars have been coming since their parents brought them to eat, and they are now in high school or college. “They are just as much my family as my own,” says Goddard. “It’s nice to see the next generation come in and eat.”

Goddard has watched other restaurants open in the area and knows Boro Bistro’s food and comfortable atmosphere sets it apart. “It’s like eating in your living room,” says Goddard, who chose the décor of the restaurant based on things she liked, such as the purple wall, wooden table, chairs and even a couch.

Its year-round menu has excellent options for customers of all ages, such as burritos, quesadillas, pizza and salads. The menu also has gluten-free options and carries an assortment of wines and beers.

Two of the most popular menu items are the Red Pepper Portobello Panini and the Spinach Artichoke Wrap. “The menu is based on places I’ve eaten and things I like,” says Goddard. “We put on a spin on it, like the Monster Fry Pizza.” The Monster Fry Pizza is chicken, cheese, bacon, onions, jalapeno, white sauce and chipotle sauce.

“I’d really like to see [Boro Bistro] continue growing,” says Goddard.
